on a related note (and because a maker IMed me about this) all this talk of bananas made me actually want to buy some so i did some quick calculations, i think the exhibit spent around $1,900 in bananas that's just a guess based on $0.79/lb here and 3 bananas weighing roughly 1 lb (blog.makezine.com....nanas.html)
I think it's fascinating, to be honest. Bananas release ethylene as they ripen, which is a hormone that accelerates the ripening of any fruit nearby. It will be very interesting to watch the the patterns that form as these ripen (blog.makezine.com....nanas.html)

December 12th, 2006 Bananas Listened to George Monbiot on the radio today talking about Fairtrade bananas at Sainburys. He was quite cool. The cheif exceutive of Sainsburys was on talking about switching all their bananas over to Fairtrade. I think he hit the nail on the head when he asked what Sainsburys margins were on the bananas . But another major factor is the oversupply in the world banana trade, driving down prices. Much of the oversupply comes from Ecuador, the world's largest banana exporter.
